If need a pick me up after your work out- this will hit the spot. Spread it on toast, dip it with a cracker or chip, or put into a corn tortilla! You can make it spicier by adding more jalapeno- or leave them out all together.
1 can of white beans rinsed and drained
1 ripe avocado
1/4 of a small onion diced
6-8 pickled jalapeno rings (more if you like) diced
1/8 of a cup of diced cilantro (more if you like)
tsp sea salt
Mash the beans, add the avocado and mash it as well. Add in the onion, jalapeno, cilantro, juice of lime and sea salt. Mix well. This can be spread on a piece of toast, used as a dip with cut up veggies or Mary Gone Crackers, or put into a warmed corn tortilla.
